Food prep is a pain in the butt. I said it and I mean it. However, I seriously love myself when I actually do it. When I make all my lunches for the week on Sunday, I end up eating SO much healthier. If I decide to be lazy (which I often do) I start calling chocolate and a cheese stick a meal. Let’s face it, that’s not okay.
With a serious love for grilled corn, I knew I wanted a recipe that incorporated this goodness. Chicken Chopped Salad, that’ll do the trick! Salads are so versatile. You can throw in whatever you want or have on hand.
This Chicken Chopped Salad is full of protein with shredded chicken, spinach, hard boiled eggs, and golden flaxseed! I ended up adding some chick peas to the salad later in the week to give it even more goodness. The cucumber and grilled corn were the perfect crunch that this salad needed. Topped off with an organic smokey tomato dressing, it was the perfect mix for the week.
